Cheesy, Bacon BBQ Meatloaf
Ingredients
- 1 2 Lbs 80/20 Ground Beef
- 2 1 Lb Ground Pork
- 3 1/2 Yellow Onion (Diced)
- 4 1/2 Cup Bacon (Cut Up)
- 5 2 Cups Break Crumbs
- 6 3 Fresh Eggs
- 7 Choice of BBQ Rub
- 8 Choice of BBQ Sauce
- 9 Package Of Mozzarella Cheese
- 10 1/2 Cup Brown Sugar
Add a nice BBQ kick to your typical meatloaf dish for a flavorful upgrade. This Cheesy, Bacon BBQ Meatloaf will satisfy your classic craving and beyond.
Instructions
- Cook up the bacon and onions on your griddle or in a frying pan
- Let cool 30 mins
- Mix the ingredients in a large bowl
- Pack the mixture into two regular sized loaf pans
- Sit in fridge for at least 1hr to harden up
- Cook on your smoker at 275-200 degrees (F) until 140(F) internal temp
- Glaze with your favorite BBQ sauce
- Continue to cook until internal temp is 160(F)
- Let rest 10-15 minutes
- Slice and enjoy!
