Cheesy, Bacon BBQ Meatloaf

Ingredients

    2 Lbs 80/20 Ground Beef
  • 2
    1 Lb Ground Pork
  • 3
    1/2 Yellow Onion (Diced)
  • 4
    1/2 Cup Bacon (Cut Up)
  • 5
    2 Cups Break Crumbs
  • 6
    3 Fresh Eggs
  • 7
    Choice of BBQ Rub
  • 8
    Choice of BBQ Sauce
  • 9
    Package Of Mozzarella Cheese
  • 10
    1/2 Cup Brown Sugar

Add a nice BBQ kick to your typical meatloaf dish for a flavorful upgrade. This Cheesy, Bacon BBQ Meatloaf will satisfy your classic craving and beyond.

Instructions

  1. Cook up the bacon and onions on your griddle or in a frying pan
  2. Let cool 30 mins
  3. Mix the ingredients in a large bowl
  4. Pack the mixture into two regular sized loaf pans
  5. Sit in fridge for at least 1hr to harden up
  6. Cook on your smoker at 275-200 degrees (F) until 140(F) internal temp 
  7. Glaze with your favorite BBQ sauce
  8. Continue to cook until internal temp is 160(F) 
  9. Let rest 10-15 minutes 
  10. Slice and enjoy!
