Begin with the bacon and the mushrooms on the griddle at its highest heat. while flipping the mushrooms add the salt, pepper, and garlic mixture to them. Continue cooking both until the bacon is crispy and the mushrooms are sweated down.

Turn the heat off on the left side of the griddle, turn the middle burner to half way, and leave the right side on high.

Apply the mayo evenly to one side of each of the six slices of bread.

Place one slice of bread mayo side down on the right side of the griddle, topped with two slices of American cheese and another piece of bread.

Place one slice of bread mayo side down on the right side of the griddle, top with a slice of Swiss cheese, some of the mushrooms, another slice of Swiss cheese and another piece of bread.

Place one slice of bread mayo side down on the right side of the griddle, top with a slice of cheddar cheese, spread the pepper jelly on the cheese, three strips of bacon, three slices of apple, another piece of cheddar cheese, and a piece of bread.
