Smoked Mashed Potatoes

Ingredients
- 1 3 Lb Bag Yukon Gold Potatoes
- 2 1 stick unsalted butter
- 3 1 Cup Heavy Whipping Cream
- 4 4 Tbsps 50/50 Kosher Salt and Coarse Ground Pepper Mix

Instructions
Mashed Potato Process
- Peel and cut potatoes so all so they are about the same size. This will ensure proper doneness throughout
- Bring 6 quarts of water to a rolling boil and add ÂĽ cup of Kosher Salt
- Cook potatoes until fork tender
- Drain Potatoes and return to same pot
- Add stick of butter (sliced evenly into 8 pcs)
- Add heavy whipping cream
- Add salt and pepper mix
- With a hand mashed (not electric mixer), mash potatoes and mix thoroughly
- Electric hand blender can cause the potatoes to get very gummy
- Allow potatoes to cool
- Scoop all potatoes into a 10” cast iron skillet
- Add 3 to 4 more thin slices of cold butter on top of potatoes

Smoking Process
- Start smoker and heat to ambient temperature of about 250 degrees
- Add smoking wood
- I used post oak but I think either hickory or pecan would also be good
- Place skillet with potatoes on smoker for about 90 minutes or until potatoes are starting to turn golden brown on top
- Remove and serve immediately!
