Instructions

    Light & stabilize grill to 450°F. Set up for direct grilling method by placing charcoal across entirety of charcoal tray.

    Scruff the exterior of the steak by slightly drawing a sharp knife across the surface of the steak. Season generously. Pro Tip: Creating more surface will increase the amount of caramelization, thus more flavor.

    Cook with the presentation side down for 3 -5 minutes. Flip, then repeat until internal temperature of 115 – 135°F is reached.

    Remove steak from the grill & slather exterior with softened bone marrow. Dry baste/re-season the outside of the steak & allow to rest for 10 – 15 minutes.

    While the steak is resting, open top damper fully to increase grill temperature to 550°F +.

    Once you’ve reached desired grill temperature, place the steak back on the grill and sear all sides evenly to lock-in bone barrow crust. Aim for 130 – 135°F internal temperature.

    While the steak is searing, place cherry tomatoes on the grill grate to slightly char & soften.

    Once the steak has reached 130 – 135°F, remove it from the grill and transfer steak & cherry tomatoes to cutting board.

    Slice steak across the grain roughly ¼ inch slices. Top steak with the cutting board juices & season once more for ultimate flavor.
