    Set smoker to 225

    Remove tomahawk from refrigerator and let come to room temp

    Smoke until internal temp reaches 115, flipping at about 85 degrees F.

    Remove from heat, and pat the steaks dry

    Sear steak over white hot charcoal for a total of 4 minutes, flipping every sixty seconds

    Let steak rest for at least 10 minutes
