Smoked Butternut Squash Soup

What better way to get a taste of fall than through the sweet nutty essence of butternut squash? How about a smoked rendition in this wholesome Smoked Butternut Squash Soup that'll raise anyone's spirits on any night of the week.

Instructions

  1. Split a butternut squash down the middle and scoop out the seeds. Give it a little layer of coconut oil and top with sea salt. Add a stem of fresh rosemary to each side and put it on the grill. 
  2. You're going to want to get your grill at about 300°. Place the squash on there to smoke until the flesh is easily manipulated with a fork (about an hour). Remove from grill. 
  3. Slice up an onion and sautee it in a pan over medium. Add half the pan to a blender, 1.5 cups of vegetable broth and 1 side of the squash (with rosemary pulled from the stem). Blend on high until everything looks blended. Salt and pepper to taste. Repeat with the other squash and onions.
  4. Serve and enjoy!
