Smoked Butternut Squash Soup

- 1 1 Butternut Squash
- 2 Sea Salt
- 3 Coconut Oil
- 4 Fresh Rosemary
- 5 1 Onion
- 6 Vegetable Broth
What better way to get a taste of fall than through the sweet nutty essence of butternut squash? How about a smoked rendition in this wholesome Smoked Butternut Squash Soup that'll raise anyone's spirits on any night of the week.
Instructions
- Split a butternut squash down the middle and scoop out the seeds. Give it a little layer of coconut oil and top with sea salt. Add a stem of fresh rosemary to each side and put it on the grill.
- You're going to want to get your grill at about 300°. Place the squash on there to smoke until the flesh is easily manipulated with a fork (about an hour). Remove from grill.
- Slice up an onion and sautee it in a pan over medium. Add half the pan to a blender, 1.5 cups of vegetable broth and 1 side of the squash (with rosemary pulled from the stem). Blend on high until everything looks blended. Salt and pepper to taste. Repeat with the other squash and onions.
- Serve and enjoy!
