Smoked Sausage Breakfast Sandwich

Ingredients
- 1 BBQ rub
- 2 White Cheddar Cheese Slices
- 3 Pillsbury Flakey Layers biscuits
- 4 Stick of Breakfast Sausage
- 5 Thick Cut Bacon
- 6 Large Eggs
You can never go wrong with a breakfast sandwich, and this one perfectly combines smoked sausage, cheese, bacon, and egg on a biscuit. This Smoked Sausage Breakfast Sandwich is the perfect start to anyone's day.
Instructions

Preheat the smoker to 250 degrees. I used cherry wood for this cook.

While the smoker is heating up, get your sausage ready. Form the sausage into a roll and cover with your favorite rub or seasoning then let sit for about 15 minutes. I used Killer Hogs Hot Rub.

Once up to temperature, place the stick inside and cook until an internal temperature of 165 or an hour.

After internal hits 165, remove the sausage and wrap tightly in tin foil and set aside for about 10-15 minutes.

Then crank the heat up to 325 and place your biscuits in. This will take about 15 minutes.

While the sausage rest and biscuits cooked, I cooked the bacon and fried the eggs. Cook eggs to your liking, I chose over-medium.

Once everything is cooked. Cut the sausage into about half inch slices, place on bottom side of biscuit with a slice of cheese on top and then place back into smoker for about 5 minutes to allow the cheese to melt.

Once the cheese as melted, remove from smoker then place fried egg, and other half of biscuit.
