Irish Nachos

Ingredients
- 1 3 Medium Size Russet Potatoes (Sliced 1/4 Thick)
- 2 1 Cup Shredded Cheese
- 3 4 Slices of Bacon
- 4 1 Green Onion (Sliced Thinly)
- 5 Sour Cream
- 6 Char-Griller Original Seasoning
- 7 Sea Salt
- 8 Oil
What better way to celebrate St. Patrick's Day?Irish Nachos are a fun twist on traditional nachos, made with thinly sliced potatoes, crispy bacon, melted cheese and all of your other favorite toppings.
Instructions
- Heat 2 middle burners on the flat iron to medium
- Add bacon slices and cook until crispy, flipping once during cooking. Slide bacon over to the side to stay warm while cooking the potatoes
- Increase heat to high and add a tablespoon or two of oil to griddle, over any remaining bacon grease and allow to heat up
- Add potato slices on top of oil and season with Char-Griller’s seasoning and sprinkle evenly with salt
- Allow potatoes to crisp up, about 7-8 minutes and flip each slice over. Season again with Char-Griller’s seasoning and salt and allow to get brown and crispy on the other side
- Remove bacon from griddle, crumble, and set aside
- Remove potatoes from griddle and add to an over safe plate. Add cheese and bacon and place plate directly back on the griddle. Cover with a melting dome or large metal bowl and allow cheese to melt
- Carefully remove plate with a pot holder when cheese is melted. Garnish with green onions and a spoonful of sour cream
