BBQ Burnt Ends

Prep Time: 15 Min | Cook Time: 4.5 Hrs

Ingredients

    5-8lbs pork belly
  • 2
    1 - 1.5 C. BBQ sauce
  • 3
    Favorite pork rub
  • 4
    1 stick of butter
  • 5
    1/3 C. of rum
  • 6
    1/3 C. brown sugar

Instructions

1. Trim top layer of fat
2. Cut into 2” wide vertical strips
3. Rotate and cut again to create 2” squares
4. Place in aluminum pan and season well with your favorite pork rub
5. Mix squares to thoroughly cover with rub
6. Heat grill to 250˚F
7. Space out cubes evenly within grill
8. Let smoke for 3 hours at 250˚F
9. Remove from grill and place in pan
10. Add 1.5 C. of your favorite BBQ sauce
11. Add 1/3 C. rum, 1/3 C. brown sugar, and 1 stick of butter
12. Mix well to even cover cubes
13. Smoke for another 1.5 - 1.75 hrs
