    Baby Yellow Potatoes

    Potato Salad Dressing ( 2 Tbsp Mayo , 2 Tbsp Dijon Mustard , 2 Tbsp Olive Oil,Salt and Pepper To Taste )

Skirt steak is a delicious and fast meal to prepare and cook, with so many ways to customize. This Skirt Steak, Grilled Peaches & Potato Salad recipe combines sweet and savory flavors with a zesty potato salad for an easy and quick meal for lunch or dinner.

Instructions

For this recipe, boil the potatoes first because this will take the longest.

  1. Season skirt steaks liberally with favorite BBQ rub
  2. Cut peaches in half and remove the seed
  3. Season the peach halves lightly with BBQ rub
  4. Heat up your grill and get the grates super hot
  5. Grill skirt steaks, peach halves, and whole green onions over direct heat
  6. Flip the skirt steaks multiple times and remove when an internal temperature of 135*F is reached
  7. In a mason jar add the mayo, Dijon mustard, oil, S&P and shake well
  8. Add the boiled and cooled potatoes in a bowl and mix with dressing, finely chopped parsley, and minced grilled green onion

Finally, add salt and pepper as needed for taste.

  1. This meal will cook hot and fast so don't walk away from the grill
  2. The peaches will get mushy if you overcook them, we’re just looking for a nice char
  3. Marinade your skirt steak in beer and seasonings the day before to bring the flavor to the next level
  4. Add salt to the potato water for seasoning
  5. Grilled peaches make for a great dessert as well
