Ingredients
- 1 4 Lbs Skirt Steak
- 2 Favorite BBQ Seasoning
- 3 4 Peaches
- 4 Parsley
- 5 Green Onion
- 6 Baby Yellow Potatoes
- 7 Potato Salad Dressing ( 2 Tbsp Mayo , 2 Tbsp Dijon Mustard , 2 Tbsp Olive Oil,Salt and Pepper To Taste )
Skirt steak is a delicious and fast meal to prepare and cook, with so many ways to customize. This Skirt Steak, Grilled Peaches & Potato Salad recipe combines sweet and savory flavors with a zesty potato salad for an easy and quick meal for lunch or dinner.
Instructions
For this recipe, boil the potatoes first because this will take the longest.
- Season skirt steaks liberally with favorite BBQ rub
- Cut peaches in half and remove the seed
- Season the peach halves lightly with BBQ rub
- Heat up your grill and get the grates super hot
- Grill skirt steaks, peach halves, and whole green onions over direct heat
- Flip the skirt steaks multiple times and remove when an internal temperature of 135*F is reached
- In a mason jar add the mayo, Dijon mustard, oil, S&P and shake well
- Add the boiled and cooled potatoes in a bowl and mix with dressing, finely chopped parsley, and minced grilled green onion
Finally, add salt and pepper as needed for taste.

- This meal will cook hot and fast so don't walk away from the grill
- The peaches will get mushy if you overcook them, we’re just looking for a nice char
- Marinade your skirt steak in beer and seasonings the day before to bring the flavor to the next level
- Add salt to the potato water for seasoning
- Grilled peaches make for a great dessert as well
