Instructions
-
01
Dice up the tomatoes, jalapenos, peaches, and onion and combine them in a bowl.
-
02
Cut the lime in half and squeeze the juice over the salsa mixture and place it off to the side.
-
03
Bring the flat iron griddle up to a medium heat. While the griddle is coming up to temp spread the salt and sugar mixture evenly across the salmon filets.
-
04
After allowing 5 minutes for the salt and sugar to liquify on the salmon put them on the griddle flesh side down for 6 minutes or until the flesh has developed a good crust.
-
05
Oil the skin and flip the filets over and allow them to cook until they reach 120 degrees in the thickest part of the filet.
-
06
Spread the BBQ sauce evenly over the filets and allow them to keep cooking until they reach 135 in the thickest part of the filet.
-
07
Once they reach 130 degrees in the thickest part of the filet remove them from the griddle and plate each fillet over 1/2 of the rice and add some of the salsa to the dish to serve.
