Set up your Char-Griller Akorn Jr. with the Smokin’ Stone for indirect heat. Stabilize the temperature between 350°F–400°F using Char-Griller Lump Charcoal.

Slice the picanha into 2-inch thick pieces. Season all sides generously with Certified Sazón and 3Roots Smoke and Roots blend. Let rest at room temperature for 30 minutes to allow the flavors to absorb.

Place the seasoned picanha slices on the indirect side of the grill. Cook until desired internal temperature is reached (typically 125–130°F for medium-rare). Then, remove the Smokin’ Stone and sear over direct flame to crisp up the fat cap. Let the meat rest for 10–15 minutes before slicing.

In a bowl, mash the avocados and season with lime juice, salt, pepper, and cilantro.
