Instructions

    Preheat your Flat Iron® griddle to medium-high heat.

    Cook the chorizo on one side of the griddle until browned and crispy, about 8 minutes. Break it into small pieces as it cooks. Transfer to a paper towel-lined plate to drain.

    On the other side of the griddle, sauté the bell pepper, onion, and jalapeño with a bit of oil until soft and slightly charred, about 4–6 minutes. Set aside.

    Lower the griddle to medium-low heat. In a bowl, whisk together eggs and half & half.

    Add oil to the griddle, then scramble the eggs gently. Keep them soft and fluffy—do not overcook. Remove and set aside.

    Warm the tortillas on the griddle for 30 seconds per side.

    Fill each tortilla with chorizo, sautéed veggies, eggs, cheese, and hot sauce.

    Wrap tightly into a burrito and return to the griddle, seam-side down. Toast for 1 minute, then roll and toast all sides until golden and crisp.
