Instructions

    Preheat your Char-Griller Portable Flat Iron to medium-high heat and lightly oil the surface.

    Cook the bacon until crispy. Set aside and reserve the bacon grease.

    Fry the eggs sunny-side up in the bacon grease. Remove and set aside.

    Wipe down excess grease if needed, then place shredded cheese on the griddle in small piles.

    Place a sausage ball on top of each cheese pile, then immediately press down with a tortilla to flatten the sausage into a thin layer. Cook until the bottom is crisp and the sausage is cooked through, about 3-4 minutes.

    Flip the smash tacos and cook for another 1-2 minutes until tortillas are golden and slightly crispy.
