Prepare the ingredients and hickory wood, then set the smoker to 250-275°F.

Place bacon on rack in a shallow tray in smoker and smoke until crispy. Reserve Bacon grease.

Cross hatch through the fat cap and season Picanha with Salt, Pepper and Garlic liberally.

Rest for 10 minutes

Place in smoker, fat side down, for 30 minutes.

Flip and smoke for another hour and a half until temp reaches around 130 for medium rare

In a cast iron, combine Bacon grease, Shallots and 1/4 can of beer and place in smoker for 5 minutes

Cut the potatoes into quarters and add them to the cast iron, along with the rest of the beer. Salt to taste, then give everything a good mix.

Cook for an hour and a half, or until potatoes are soft

Chop Bacon and add to cast iron on top.

Shred cheese and add to cast iron on top of Bacon.

Place back in the smoker until cheese is nicely melted
