Flanken-style ribs are cut across the bone, resulting in thin, meaty strips with rich marbling that cook quickly and absorb marinades like a sponge. They're ideal for high-heat, fast-paced grilling and deliver maximum flavor in minimal time.

This recipe takes that quick-cooking cut and layers it with Thai-inspired flavor using a blend of teriyaki, ginger paste, toasted sesame oil, garlic, chili sauce, and more. After a few hours (or overnight) in the marinade, you’ll toss them on a charcoal grill and flip frequently to develop that signature caramelized crust. No flanken ribs? No problem—this marinade also works great with short rib strips, skirt steak, or even chicken thighs.

Instructions

    Mix all ingredients into a separate bowl and allow your meat to marinate for at least 4 hours or overnight

    This marinate should be enough for at least 12 flanken ribs.

    Set your charcoal grill or charcoal kamado grill at 550 for a hot and fast cook

  4. 04

    Flanken ribs don’t need a long time at all on the grill just keep flipping every minute or so, so they do not burn!

    Takes about 5-8 minutes or less. When they have a beautiful char they are done

    Served with lemon pepper asparagus and white rice and enjoy!
