Sweet Potato Medallions

Ingredients

    1 Large Sweet Potato, 1/2 inch slices
  • 2
    Olive Oil
  • 3
    4 oz. Goat Cheese
  • 4
    1 Tbsp Heavy Cream
  • 5
    1 Tbsp Honey
  • 6
    1 Tbsp Dried Cranberries, Chopped
  • 7
    1 Tbsp Walnuts, Chopped
  • 8
    1 tsp Fresh Thyme, Chopped

Every Thanksgiving needs good appetizers. How else are you going to keep people out of the bread basket and away from the turkey while it cools? Char-Griller Ambassador Angel Hernandez of @bustedcanofbiscuits' Sweet Potato Medallion Recipe is sure to be a crowd pleaser. 

Instructions

1. Light grill for indirect heat and heat grill to 375 degrees

2. Brush both sides of the sweet potato slices with olive oil

3. Sprinkle them with cinnamon and sugar on both sides

4. Place slices directly on grill or on a mesh cooking tray

5. Allow the slices to cook for 15 minutes then turn over and cook for an additional 15 minutes

6. Mix together goat cheese, cream, and honey in a small bowl

7. Spoon a teaspoon of the cheese mixture on the warm sweet potato slices

8. Sprinkle each slice with cranberries, thyme, and walnuts

9. Drizzle with honey before serving
