Looking for an easy appetizer that brings fall flavor straight to your grill? These Sweet Potato Medallions are the answer. Lightly grilled and topped with a creamy goat cheese mixture, crunchy walnuts, tart cranberries, and a drizzle of honey, they strike the perfect balance between sweet, savory, and smoky.

    Light grill for indirect heat and heat grill to 375 degrees

    Brush both sides of the sweet potato slices with olive oil

    Ingredients

    • Olive Oil
    • 1 Large Sweet Potato, 1/2 inch slices

    Sprinkle them with cinnamon and sugar on both sides

    Place slices directly on grill or on a mesh cooking tray

    Allow the slices to cook for 15 minutes then turn over and cook for an additional 15 minutes
