Preheat smoker to 225

Peel garlic cloves. Cut the tomatoes, jalapenos, and onions in half. Keep seeds and ribs to have spicier salsa.

Ingredients
- 6 Cloves Garlic
- 2 Jalapenos
- 8 Roma tomatoes
- 1/2 Red Onion Chunked

Place tomatoes, jalapenos, onions, and garlic cloves in a sheet pan or plate. Drizzle olive oil over them and season with salt and pepper. Smoke for an hour and a half.

Remove the vegetables and let cool. Add veggies to blender or food processor with cilantro, lime juice, and garlic. Pulse to preference.
