Fired up grill/smoker to 325°-350° for a high heat quick smoke.

Place the sausages on the grill and smoked for 20 minutes

Put the marinara on the grill/smoker about 10 minutes after the sausages

Bump up the heat in the grill/smoker and charred the sausages directly over the fire

Toast the French Rolls with olive oil using a cast iron skillet.
