Shrimp on the grill are delicious, but shrimp is one of those foods that is challenging to grill because of their size. We’ve all had at least one shrimp get lost to the coals over the years. This foil packet recipe ensures the shrimp don’t dry out and packs them full of flavor.

    Using a blender, combine onion, garlic, coconut, lime zest, lime juice, cilantro, olive oil, and soy sauce. Blend until smooth.

    • 1 Small yellow onion, chopped
    • 3 cloves Garlic
    • 1 cup Shredded sweetened coconut
    • Zest and juice from 1 lime
    • 1 cup Fresh cilantro
    • 1/4 cup Extra virgin olive oil
    • 1/4 cup Soy sauce

    Place marinade and shrimp in a bowl and toss to coat.

    • 1 pound Raw shrimp, peeled and deveined

    Set aside for 5 minutes.

    Preheat grill to medium high heat.

    Tear off four large squares of foil.

    Spray one side of foil with cooking spray.

    Divide vegetables and shrimp evenly among each packet.

    • 2 cups Corn kernels
    • 1 Zucchini, sliced into 1/4-inch rounds and halved
    • 1 cup Halved cherry tomatoes

    Season with salt, pepper and fajita seasoning.

    Fold up packets and seal completely.

    Put packets on grill, close the lid, and grill for 6 minutes. Turn packets over and grill for 7 minutes.
