    Fire up the Grand Champ XD Charcoal Grill to about 400°F with lump charcoal.

    Prepare the red potatoes with the olive oil as a binder and season with Dad's Original seasoning.

    Cook the potatoes for 60 minutes.

    Fire up the XD Smoker to about 350°F with lump charcoal and pecan wood chunks for the steaks.

    Use the 3 ribeye steaks and coat all sides with olive oil.

    Place the steaks in for a quick high heat smoke bath.

    Add lump charcoal to the side firebox with a grill grate and get it nice and hot for searing.

    Sear the steaks over high heat.
