Mandolin the onion into very thin slices.

Divide the ground beef into 8 equally sized balls.

Bring all three burners of the flat iron to a medium high heat.

Place some onions onto the griddle in small piles then place one ball of beef onto each pile of onions and smash them using your spatula.

After 2 minutes or when you see the crust forming on the bottom of the patties flip them for an additional two minutes or until you see the crust formed on the bottom.

Top four of the patties with cheese to melt.

Place each patty with cheese on top of a patty with no cheese.

Place the buns on the Flat Iron to toast, once toasted remove and place a double burger on each bun to serve.
