Prepare to wow your next dinner guests with this warm weather classic. When you think about tri-tip, you can't help but think about warm weather and open fires. This recipe is an easy, low-stress way to feed a bunch of people, whether you want to slice it thin and toss it on a charcuterie board or let everyone build their own sandwiches with it. This cut will go a long way and taste delicious as well!

Combine the instant coffee and BBQ rub.

Bring the Barrel Pro up to 325 degrees with the charcoal all on the right side of the barrel.

Place the tri-tip on the grate's side opposite the charcoal with the thicker part of the roast facing the charcoal.

Let the tri-tip cook until it reaches an internal temperature of 130 degrees.

Raise the charcoal pan to the top so it is directly below the cooking grates. Leave the lid of the cooker open for 3 minutes to allow the coals to get glowing hot.

Place the tri-tip top side down over the coals for one minute to sear, then flip and allow the back side to sear for one minute.

Remove from the grill, allow it to rest for 5 minutes, slice, and serve.
