Instructions

  1. 01

Put the steaks in a Ziplock bag with the chimichurri sauce. Ensure the steaks are fully coated, then refrigerate for 4 hours.

  2. 02

After four hours, take the steaks out of the bag and remove most of the marinade.

  3. 03

Evenly coat the steaks with the salt, pepper, and garlic mixture.

  4. 04

Place the charcoal grate in the cooking chamber of the Smokin' Pro at its lowest level. Add about half a chimney of lit charcoal to the firebox side and a foil pan to the opposite side. Heat the cooker to approximately 230 degrees.

  5. 05

Place the steaks on the cooker over the foil pan to receive indirect heat. After 15 minutes, flip the steaks.

  6. 06

When the steaks reach about 115 to 120 degrees, take them off the cooker. Leave the lid open and raise the charcoal rack to its highest level. Allow the charcoal to heat up for 5 minutes.

  7. 07

Position the steaks directly over the charcoal. Rotate them every minute and flip them over every two minutes until they reach the desired internal temperature of 130 degrees.
