  1. Char-Griller Grills Grand Champ™ XD 8250
  2. Char-Griller Grills Charcoal Chimney
  3. Char-Griller Grills Drip Pan & Rib Rack
  4. Char-Griller Grills Grill Glove
  5. Fire Torch
  6. Lump Charcoal, Smoking Wood & Fire Starters
  7. Kitchen Twine: two medium sized strings

Prep

  1. Using a sharp knife, French cut the prime rib roast to remove a chunk of fat and to clean & see the bones. This step is optional.
  2. Coat all sides with olive oil to taste
  3. Season all sides with Steak, Creole & Sazón seasonings
  4. Double tie & knot the prime rib roast with kitchen twine
  5. Place the prime rib roast in a roasting rack & pan
  6. Rest, sweat, and allow roast to get to room temperature.

Cook Directions

  1. Fire up XD 8250 in the main grilling area to 500° F with a full chimney of lump charcoal & mesquite smoking wood (fire on the right side of the grill & the food placed on the opposite side)
  2. Place the prime rib roast into the main grilling area
  3. Roast the prime rib roast at 500° F for the first 40 mins & then lower the heat to 350° F
  4. Check the lump charcoal and smoking wood & rotate every 35 mins
  5. Cook to internal temperature 135° F & remove from heat. (Takes a few hours to reach target internal temp)
  6. Searing: Add fuel and bump up the heat to about 600° F
  7. Rest the prime rib while the grill is getting piping hot
  8. When the grill is piping hot, melt garlic cilantro butter
  9. Lather the prime rib roast with the melted garlic cilantro butter
  10. Sear the meat sides of the prime rib for a few minutes
  11. Rest roast for 20 minutes
  12. Slice & enjoy with au jus, grilled asparagus, smoked cornbread and Mrs. CC BBQ twice baked potatoes.
