If you’re looking to take your turkey to the next level, this Creole-inspired roasted turkey is the way to go.
This isn’t your average smoked turkey recipe: this creole-style smoked bird is packed with bold spices, deep smoky flavor, and crispy, golden skin. Smoked low and slow on a Char-Griller charcoal grill, the rich, wood-fired taste infuses every bite, while the Creole seasoning brings just the right kick of heat and herbs.

Trim the turkey with a sharp knife and remove excess skin and fat.

Inject the turkey with the Creole Butter.

Lather all sides with olive oil for the binder.

Season with Char-Griller Grills Creole Seasoning, SazĂłn Seasoning, Black Pepper and Paprika.

Stuff the cavity with, onions, garlic cloves, orange slices, apple slices & fresh herbs.

Place the chicken broth under turkey in the pan under the roaster.

Preheat the smoker or grill to 350° and allow to heat up for 15-20 mins prior to putting the turkey on.

Add the turkey to the smoker Tip: Insert the probe into thickest part of the turkey breast and set to cook to internal temperature 165° after the first hour of cooking.

Rotate & baste the turkey with melted the Homemade Creole butter with a fresh herb brush about every 30-45 minutes or hourly depending on how the turkey is cooking.

Cook to internal temperature 165°: takes roughly 4 hours. Remove the turkey and rest for 20 mins.
