The day before remove the turkey from packaging, remove the neck and giblets, place it in a brine bag and cover with the full jar of jalapeño peppers and juice. If the turkey is not fully submerged add water until it is.

After brining overnight remove the turkey from the brine and with a heavy knife or shears, cut along each side of the backbone to remove it.

Apply pressure to the center of the turkey breast to break the breast bone. The goal is to have the bird flat with it being mostly the same height from bottom to top.

Mix the BBQ seasoning with the chipotle seasoning and cover the back and front side of the turkey.

With the Smokin Pro up to 300 degrees with our coal bed banked to the right side of the cooking chamber, place the turkey on the left side of the cooking grate. Make sure the turkey is laying the way you will want it to be presented.

Every half an hour rotate the turkey 180 degrees to ensure even cooking.

Once the turkey reaches 165 degrees in the deepest part of the breast (roughly 2.5 to 3 hours) remove and serve.
