    Trimmed & broke down a full slab of pork spare ribs into individual pieces

    Coated all sides with olive oil for the binder

    Seasoned all sides with my Louisiana Red Dirt BBQ Rub

    Rested the meat in fridge for an hour

    Fired up my favorite grill/smoker: Smokin’ Champ 1624 with lump charcoal, mango & mesquite smoking wood chunks in the main grilling area to about 315°F. (Placed the wood chunks on the cooking grill grate for slow lingering smoke)

    • Charcoal Chimney & Fire Starters

    Placed the full slab rib tips opposite side of the lump charcoal & wood chunks

    Checked in on the fire & spritzed with apple juice every 30 mins

    Smoked for two hours & removed
