Rested the meat in fridge for an hour

Fired up my favorite grill/smoker: Smokin’ Champ 1624 with lump charcoal, mango & mesquite smoking wood chunks in the main grilling area to about 315°F. (Placed the wood chunks on the cooking grill grate for slow lingering smoke)
