What Are Burnt Ends?

Burnt ends are little bites of barbecue heaven, cut from the point end of a smoked brisket. They're known for their crispy, caramelized bark on the outside and tender, juicy inside. These smoky, flavorful pieces of meat have become a BBQ favorite, especially in Kansas City-style cooking. After hours in the smoker, the brisket point is cut into chunks, tossed in sauce, and put back on the grill to get even more flavor. If you're a fan of smoky, flavorful meats, brisket burnt ends are the ultimate treat!

Instructions

  1. 01

Trim most of the fat from both sides of your brisket point.

  2. 02

Cover both the front and the back evenly with the SPG rub followed by the BBQ rub.

  3. 03

Fill the Smokin Pro's firebox with charcoal and spread some wood chunks throughout.

  4. 04

Light the firebox on the far end and close the vents down to just barely open to hold a low temperature of 225 overnight.

  5. 05

Put the brisket on to let it cook for 8 hours.

  6. 06

At the 8 hour mark check your brisket and firebox, if the brisket is over 200 degrees, probes like butter and feels soft its done but it may need a little more time so add some charcoal and let it keep going until all three of those requirements are met.

  7. 07

Once the brisket reaches the desired doneness, evenly apply sauce to the top and allow it to glaze on the smoker for an additional 10 minutes.

  8. 08

Remove from the smoker, cut into cubes, and serve.
