Pre-heat Char-Griller smoker to 250 F.

In a large bowl whisk together egg white and water until frothy. In a separate bowl combine sugar, ground cinnamon, salt, and nutmeg. Stir until well mixed.

Add pecan halves to bowl with the egg white mixture and toss until well coated. Add sugar mixture to the pecans and toss until evenly coated.

Place pecans evenly on a baking sheet and smoke at 250 F for one hour or until pecans are evenly browned. Enjoy!
