I've always thought chicken lollipops were visually appealing and never tried making them until now. The honey/soy glaze mixture is a classic flavor bomb. The caramelization from the fire is to die for!

    The night before, trim and pull off the the skin and connective tissues from the last three inches of the drumsticks to create "lollipops." Pat dry and season with the rub to dry brine on a cooling rack in a tray, uncovered in the fridge overnight. The baking powder helps remove the moisture from the skin to help it get crispy when cooking.

    • 8 Chicken drumsticks
    • 3 tablespoons Garlic salt
    • 1 tablespoon Cracked black pepper
    • 1 tablespoon Smoked paprika
    • 1 tablespoon Baking powder

    The next day, take the chicken out at least one hour prior to cooking. Preheat your grill for two zone cooking at about 300°F and cook/smoke the legs indirectly for 30-35 minutes. Mesquite and cherry wood go very well with chicken.

    Mix soy sauce and honey at room temperature

    Next, increase your grill to high heat and move the lollipops over the direct flame to crisp the skin on all sides.

    Lastly, move them again away from the heat, and brush all sides with the honey-soy mixture and allow to set up for about five minutes with indirect heat, remove and enjoy!
