Fire up your Char-Griller Side Fire Box with lump charcoal and heat until the coals are red-hot.

Coat all sides of the ribeye steaks with a light layer of olive oil to help the seasoning stick. Generously season each side with your favorite steak seasonings.

Place the seasoned steaks and whole jalapeños directly over the hot lump charcoal on the cooking grates. Grill the steaks to an internal temperature of 120°F for medium-rare, or adjust based on your desired doneness. Keep an eye on the jalapeños, turning as needed until they’re blistered and slightly charred.

Remove the steaks and jalapeños from the grill and place them in a foil pan. Top each steak with a dollop of fresh parsley garlic butter, allowing it to melt over the hot meat for extra flavor.

Let the steaks rest for a few minutes in the foil pan, allowing the juices to redistribute. Slice, serve, and enjoy your perfectly grilled ribeye steaks with a side of charred jalapeños.
