Rinse the wings thoroughly and pat them dry using a paper towel.

- 1 1/2 pounds Party wings

Season both sides generously with lemon pepper, then place them on a cooling rack in a tray. Allow the wings to rest in the fridge, uncovered, for a minimum of four hours.

An hour before cooking, bring the wings to room temperature.

Prepare your grill or smoker for indirect cooking at 250°F.

Smoke the wings for about an hour or until the internal temperature reaches 170°F, utilizing mesquite and/or cherry wood for a delightful flavor.

Set the wings aside to rest for at least 30 minutes.

Set up your grill for high heat searing while you make the sauce.

In a small saucepan, simmer the sauce and butter over low heat until the butter is melted.
