    Trim any excess fat from the rack of ribs. Score the back membrane to help the seasoning penetrate and improve tenderness.

    Evenly coat both sides of the ribs with BBQ rub, pressing the seasoning into the meat for full coverage.

    Bring your grill up to 300°F, banking the fire on the right side of the cooking chamber for indirect heat.

    Just before placing the ribs on the grill, add your favorite smoking wood to the charcoal fire for extra flavor.

    Place the ribs on the left side of the top rack, away from the direct heat. Close the lid and cook for 1 hour.

    After the first hour, add a little more rub to the top of the ribs and pat it in. Rotate the rack 180 degrees and flip it over. Continue cooking for 45 minutes.

    Place the butter, half of the remaining rub, and apple juice onto a sheet of foil. Set the ribs meat-side down on top of the mixture. Seal the foil tightly and return the ribs to the grill. Cook for about 1 hour, or until the internal temperature reaches around 200°F and the ribs are tender.

    Open the foil, flip the ribs meat-side up, and sprinkle the remaining rub over the top. Close the foil and cook for an additional 5 minutes to set the seasoning.
