Nothing is like a match made in heaven other than an herby compound butter smothered around lamb chops. The fresh herbs help take away even of the gamey taste from the lamb and the butter just adds to the richness and overall moisture of the chop.

    Preheat your smoker to 250ËšF. .

    Make the herb butter by mixing together the room temperature butter, chopped thyme, rosemary and oregano with a quick sprinkle of BBQ Rub.

    • 8 ounces Butter, room temperature
    • 1 ounce Fresh Thyme, chopped
    • 1 ounce Fresh Rosemary, chopped
    • 1 ounce Fresh Oregano, chopped
    • 2 tablespoons Your favorite BBQ rub

    Using your hands, cover the lamb chops in a layer of the herb butter.

    Ingredients

    • 2 pounds Lamb loin chops (4 chops total)

    Place into a cast iron and smoke for about 30 minutes or until the internal temperature hits 110ËšF.

    Keeping a small amount of butter in the cast iron, set the lamb aside and place the pan over direct heat.

    Sear the lamb chops for 2 minutes a side.
