    Trim any silver skin or excess fat from the pork tenderloins. Slice into medallions about ½ to 1 inch thick.

    Coat all sides of each medallion with your SPG rub.

    Set the left and middle burners to medium-high heat and the right burner to low. Allow the Flat Iron® Griddle to come to temp.

    Place pork medallions on the hotter side of the griddle. Flip every 60 seconds until each side is browned and internal temp reaches 130°F to 145°F.

    Move medallions to the cooler side of the griddle. Brush each side with BBQ sauce. Turn off the burners and let the sauce caramelize, flipping a few times to coat evenly.
