Best Veggies for the Grill

We know that the king of the grill has always and will always be meat. That being said, there are some fantastic vegetable that deserve recognition for being pretty delicious when they are cooked on the grill.

If you are looking to expand your grilling horizons or just need a side dish plan for those steaks, hamburgers, or ribs, here are some of the best veggies for the grill.

1. Zucchini and Squash

Fresh and in season during the summertime, zucchini and yellow squash are great on the grill. Add some olive oil and seasonings of your choice. Pro Tip: When you cut them, make sure to cut the pieces big enough so they don’t fall between the grates.

2. Peppers

Peppers of all varieties work well on the grill. From subtly spicy poblanos to bell peppers, grill them whole or halved for a side dish. You can also char them and cut them up to put on sausages or tacos.

3. Asparagus

There is nothing quite like asparagus with a good char and some lemon and salt. Quick and fast to grill, they make the perfect side dish to steak, salmon and more. Give them a quick toss with some parmesan cheese right when they come off the grill for an extra boost of flavor.

4. Potatoes

While not everyone considers them a vegetable, we can all agree that potatoes belong on the grill. Wrapped in foil and baked in the coals or tossed with olive oil and salt and cut into quarters, potatoes char up well and hold onto the delicious smoky flavor of charcoal better than any other vegetable.

5. Corn

Summer means corn. It’s a quintessential part of the season. Whether you insist it must be left in the husk or want to take it off and wrap it in foil with some butter, the grill is the perfect way to cook corn. Add salt, cojita, cilantro, and chili powder to make Mexican Street Corn!

6. Tomatoes

Ever tried a grilled Caprese Salad? Now you’re thinking about it aren’t you? Tomatoes work great on the grill. Slice them up and grill the slices to make a fun twist on a classic summer salad or keep them whole and char for a salsa.

7. Onions

In all their forms and varieties, onions are by far one of our favorite things to throw on the grill. From whole sweet Vidalia onions and your basic white onions for burgers. When you grill an onion you take away some of the harsh flavor making it more mild and slightly sweeter.
