    Fire up the smoker to 250° using lump charcoal with apple wood on top of the fire for a lingering smoke.

    Lay the chicken thighs in a pan and season both sides with the Classic American Seasoning, sweet and smoky BBQ rub.

    Place the pan in the main cooking area opposite side of the fire and smoke for 45 minutes so the chicken takes on color and smoke.

    Pour BBQ sauce over the chicken, sweet and smoky BBQ rub, place butter across the top and drizzle the honey.

    Return the pan to the smoker and cook another 60 minutes and bump up the heat to 350° until the chicken reaches 200° internal and is tender enough to shred.

    Pull the chicken directly in the pan and mix it with the melted butter and sauce.

    Serve Pile the pulled smoked chicken onto slider buns with cheese and spoon extra sauce from the pan over the top with some crunchy pickles and chips.
