Marinate the pork chops. In a bowl, whisk together the Italian dressing, minced garlic, paprika, salt, and pepper. Pour over the pork chops and marinate in the refrigerator for at least 1 hour, or up to 24 hours for deeper flavor.

Preheat the grill. Load your Char-Griller Legacy with charcoal and preheat to 400°F.

Make the pepper jelly glaze. While the grill heats up, add the pepper jelly and hot sauce to a small saucepan over medium heat. Cook until the jelly melts down into a smooth, pourable glaze.

Oil the grates. Once the grill is hot, spray the grates with a neutral oil to prevent sticking.

Sear the pork chops. Place the pork chops directly over the hot coals and grill the first side for 10 minutes, until well-charred with good color.

Flip and continue cooking. Turn the chops and cook until the internal temperature reaches 135°F.

Glaze the chops. Brush the pork chops generously with the pepper jelly glaze and continue grilling until the internal temperature hits 145°F.

Rest and serve. Remove the pork chops from the grill and let them rest for 3-5 minutes before slicing or serving. Enjoy!
