Preheat the grill. Load your Char-Griller Legacy with charcoal and heat to 350°F. Raise the adjustable rack halfway up the grill, closer to the coals.

Season the beef. In a large bowl, combine the ground beef with salt, pepper, garlic powder, onion powder, and Worcestershire sauce. Mix well. Add diced jalapeños for extra flavor and spice, if desired.

Portion the meat. Divide the seasoned beef into eight 1/4 lb balls. You'll use two balls per burger.

Stuff the burgers. Flatten each ball into a round disc. Place a slice of fresh cheddar on top of one disc, then stack a second disc on top to sandwich the cheese in the middle.

Seal the edges. Pinch the sides of the two discs together to form one large stuffed patty. Don't worry if the burgers look oversized — they'll shrink as they cook.

Grill the first side. Place the burgers on the preheated grill and cook for 10-15 minutes, until the bottom has cooked through with nice grill marks. Avoid moving or flipping them multiple times.

Flip and continue cooking. Flip the burgers once and continue cooking until the internal temperature reaches 140°F, about 10 more minutes.

Manage flare-ups. If the burgers are cooking too fast or the charcoal flares up, lower the adjustable rack away from the heat to slow the cooking.

Add a final layer of cheese. About 5 minutes before the burgers are done, top each one with another slice of cheddar and close the grill lid to let it melt.

Serve immediately. Remove the burgers from the grill, place on buns, and serve right away. The cheese firms up as it cools, so serve fresh for the meltiest center.
