Instructions

  1. 01

Set your smoker to 300°F. Anywhere between 250°F and 325°F will work, you will just need to adjust the cook time accordingly. Add hickory or maple wood chunks to your hot coals to build flavor into the meatloaf.

  2. 02

Heat the olive oil in a skillet over medium heat and sauté the diced onion for about 5 minutes until soft and translucent. Add the garlic and stir well, cooking for 30 seconds until fragrant. Remove from the heat and allow the mixture to cool completely before adding it to the meat.

  3. 03

In a large bowl, combine the ground beef, breadcrumbs, eggs, Italian seasoning, cooled onions and garlic, parsley, Worcestershire sauce, salt, and pepper. Mix gently until just incorporated. Overworking the meat will make the meatloaf tough.

  4. 04

Because the meatloaf is wrapped in bacon, form it on a cooling rack or sheet pan rather than in a loaf pan. Shape the mixture by hand into a rectangular oval loaf and cover the top and sides with strips of bacon, overlapping slightly so the bacon stays in place. Thin-cut bacon works best, as thick-cut bacon will not render fully in this cook. If desired, season the bacon exterior with your favorite beef rub.

  5. 05

Place the meatloaf on the smoker. If you are using a cooling rack, set a drip pan underneath to catch the rendered fat. Cook for 1 hour before checking the internal temperature.

  6. 06

While the meatloaf cooks, whisk together the maple syrup, bourbon, Worcestershire sauce, Dijon mustard, ketchup, and paprika in a small bowl until smooth.

  7. 07

When the internal temperature reaches 145°F, brush the meatloaf generously with the maple bourbon glaze. Return it to the smoker to let the glaze set.

  8. 08

Pull the meatloaf from the smoker when the internal temperature reaches 160°F. Rest for 10 minutes, then slice and serve.
