In a large container or food-safe tub, combine water, Worcestershire sauce, curing salt, and all seasonings (except the finishing lemon pepper). Mix thoroughly until dissolved. Add the thinly sliced bottom flat steak and fully submerge in the marinade. Cover and refrigerate for 24 hours to allow deep flavor penetration.

Fill your Char-Griller XD Smoker with a small amount of Char-Griller Lump Charcoal and apple wood chunks. Ignite using fire starters and a torch. Allow the smoker to preheat for about 15 minutes, dialing in airflow to stabilize the temperature at 180°F.

Remove beef from marinade and lightly pat dry. Arrange slices evenly on smoker racks, leaving space between pieces for airflow. Smoke at 180°F for 4 hours. Periodically rotate and flip the meat to ensure even exposure to smoke.

After approximately 4 hours, remove the jerky from the smoker. Allow it to rest for several hours to fully set and finish drying. Once rested, dust lightly with Baba’s Chicago Lemon Pepper Seasoning for a bright, bold finishing kick.

Plate, bag, or vacuum seal once fully cooled. Store in airtight containers for snacking throughout the week.
