Set your Char-Griller Smokin-Pro to 275°F for indirect heat.

Season the lamb rib chops generously with Blazing Star BBQ All-in-One seasoning (or your favorite seasoning).

Place the seasoned lamb chops onto the smoker and cook until the internal temperature reaches 130°F. This should take approximately 45-50 minutes.

After smoking, sear the lamb rib chops over direct heat to lock in the flavor. Sear until the internal temperature reaches 140°F.

While the lamb rests for 5-10 minutes, combine the Thai chili peppers, cilantro, lemon juice, garlic cloves, fish sauce, and olive oil in a blender or food processor. Blend until smooth to create the pepper dip.
