Hi Char-Griller fam! I'm Melissa - a recipe developer, content creator, and passionate pitmaster. After years of admiring the art of barbecue and learning from local legends, I’ve spent the last five years perfecting my craft. Most recently, I had the incredible honor of being featured on *Netflix Barbecue Showdown, Season 3*. Before diving into the world of BBQ full-time, I spent many years teaching students with special needs - a cause that remains close to my heart as I continue to advocate for this amazing community.

This is the hardest!! Haha!! Fresh fish right out of the water and onto the grill!!

Smokin’ Champ®

I love all of my Char-Grillers, but my Smokin' Champ Offset is my OG!! I named her Chardi-B and she has been with me through it all. I have learned so much on this grill and have developed quite an emotional attachment to her. 🙂

Char-Griller Q&A with Melissa Pappas

What inspired you to start barbecuing, and how did you get into it?
I started barbecuing because it scared me! I had explored pretty much every other type of cooking, and this was the "final boss" for me. It’s such a craft, and I wanted to ensure that I approached it with the respect it deserves. Years later... here we are, and I’m in love!
What’s one key message you’d like to share with fellow BBQ enthusiasts?
No matter what happens, remember to have fun! Cooking helped me through some of the hardest times of my life, and I love connecting with others to help them find healing in the kitchen and on the grill, just like I did. If there’s anything I can do to support you, don’t hesitate to reach out!
What advice would you give to someone just starting out with grilling?
Don’t give up, always keep learning, and take your time! BBQ has so many techniques and methods, so I recommend trying them all to see what works best for you.
