Preparing to Make Roasted Prime Rib on the Grill

How to Prep the Prime Rib

  2. Coat all sides with olive oil to taste
  3. Season all sides with Steak, Creole & SazĂłn seasonings
  4. Double tie & knot the prime rib roast with kitchen twine
  5. Place the prime rib roast in a roasting rack & pan
  6. Rest, sweat, and allow roast to get to room temperature.

    Combine all Garlic Cilantro Butter ingredients in a food processor and mix thoroughly. Place in fridge and use when needed.

    Fire up XD 8250 in the main grilling area to 500° F with a full chimney of lump charcoal & mesquite smoking wood (fire on the right side of the grill & the food placed on the opposite side)

    Place the prime rib roast into the main grilling area

    Roast the prime rib roast at 500° F for the first 40 mins & then lower the heat to 350° F

    Check the lump charcoal and smoking wood & rotate every 35 mins

    Cook to internal temperature 135° F & remove from heat. (Takes a few hours to reach target internal temp)

    Searing: Add fuel and bump up the heat to about 600° F

    Rest the prime rib while the grill is getting piping hot

    When the grill is piping hot, melt garlic cilantro butter

    Lather the prime rib roast with the melted garlic cilantro butter

    Sear the meat sides of the prime rib for a few minutes

    Rest roast for 20 minutes
