Grand Champ XD Steak n’ Potatoes Recipe

Ingredients
- 1 3 Ribeye Steaks, thick
- 2 Favorite steak seasoning: this recipe used Certified Creole BBQ's Houston Salt n' Pepper Blend, Dad's Classic American & Adobo Seasonings. Season your ribeye to taste
- 3 Olive Oil: binder

- 5 Baby Red Potatoes, sliced
- 6 Lump Charcoal, Smoking Wood, Charcoal Chimney, Fire Starters and torch
- 7 Char-Griller Grand Champ XD 8250
Roasted Red Potatoes Prep & Cook
- Fire up the Grand Champ XD Charcoal Grill to about 400°F with lump charcoal.
- Prepare the red potatoes with the olive oil as a binder and season with Dad's Original seasoning.
- Cook the potatoes for 60 minutes
- Keep warm on the XD.
Steak Prep & Cook
- Fire up the XD Smoker to about 350°F with lump charcoal and pecan wood chunks for the steaks.
- Use the 3 ribeye steaks and coat all sides with olive oil
- Season all sides with Houston Salt n' Pepper blend, Dad's Classic American & Adobo seasonings.
- Place the steaks in for a quick high heat smoke bath.
- Place fresh cilantro garlic butter on the steaks and allow to melt. Fresh Cilantro Garlic Butter recipe
- Add lump charcoal to the side firebox with a grill grate and get it nice and hot for searing.
- Sear the steaks over high heat.
- Remove and rest for a few minutes.
- Serve with the roasted red potatoes
