Southwest Potato Skins

Ingredients
- 1 4 Potatoes, Cleaned
- 2 2 Tbsp Olive Oil
- 3 Salt and Pepper to Taste
- 4 2 Tbsp Chopped Green Onions
- 5 2 Cups Chopped Spinach
- 6 1/2 Cup Corn
- 7 1/2 Cup Canned Black Beans, Drained and Rinsed
- 8 Juice of Half a Lime
- 9 1/4 tsp Salt
- 10 1/2 tsp Cumin
- 11 1 Cup Monterey Jack Cheese, Shredded
The game day favorite with a twist, this Southwest Potato Skins Recipe is easy to make and sure to be a huge hit at any party or event. Make sure to make two batches!Â
Instructions:
1. Light grill for indirect heat and heat grill to 350
2. Poke holes all around each potato with a fork. Brush potato with olive oil and season with salt and pepper
3. Place on grill for approximately 40 minutes, turning halfway through
4. In a skillet over medium heat, add corn, spinach, onions, beans, lime juice, and seasoning
5. Cook for 10 minutes until ingredients are heated through
6. Remove skillet from heat and allow to cool slightly
7. While filling is cooling, split potatoes in half lengthwise
8. Scoop out center of potato halves, leaving ¼” of the potato along the skin
9. Add a big pinch of cheese to each half, then fill cavity with a spoonful of filling
10. Sprinkle a generous amount of cheese on top of each half
11. Place potato halves directly on grill grates and grill until cheese is melted
