Grill and Smoke BBQ Smoked Meatloaf

Ingredients

    3 lbs. ground beef (80/20)
  • 2
    Mesquite wood chunks (use your favorite wood)
  • 3
    1 medium onion
  • 4
    1/2 Cup Jank BBQ sauce
  • 5
    1 Cup bread crumbs
  • 6
    2 Eggs
  • 7
    Favorite Seasoning

Instructions

Prep

  1. Preheat smoker/grill to 275°F
  2. Sautee onions
  3. Mix all ingredients in a bowl
  4. Put mixture in a loaf pan and place in refrigerator for 3-4 hours
  5. Remove from refrigerator and cover with rub 

Cook Directions

  1. Place meatloaf on smoker/grill
  2. Grill for 90 minutes, then check to see if it needs to be spritzed
  3. Grill for 30 minute increments, then check to see if it needs to be spritzed
  4. When the internal temp is 155°F, apply sauce
  5. Continue to grill for 5-10 minutes (until internal temp is 162°F)
  6. Remove from the smoker/grill, let rest for 15 minutes and enjoy!
