Smoked Jerk Chicken
Ingredients
- 1 1/2 Onion, Chopped
- 2 4 Green Onions, Chopped
- 3 Fresh Thyme - 2 Tbsp
- 4 Ginger - 1.5 Tbsp
- 5 8 Garlic Cloves
- 6 Cinnamon - 1 Tbsp
- 7 Allspice - 1 Tbsp
- 8 White Pepper - 1 Tbsp
- 9 Sea Salt - 2 Tbsp
- 10 Nutmeg - 1/2 Tbsp
- 11 Brown Erythritol (or Brown Sugar) - 2 Tbsp
- 12 Sugar Free Honey - 2 Tbsp
- 13 Soy Sauce - 2 Tbsp
- 14 Chicken Boullion Powder - 1 Tbsp
- 15 2 Scotch Bonnet or Habanero Peppers
- 16 3 Pounds of Bone-In Chicken Pieces
Flavorful and complex, this Smoked Jerk Chicken Recipe packs a punch. While the overnight marinade might seem like a hassle, it is well worth it for the finished product.
Instructions
1. Blend all of the ingredients until well incorporated. The mixture will be thick and paste-like, not completely smooth.
2. Put the marinade in a large plastic bag with 3 pounds of bone in chicken pieces, and marinate for at least 24 hours.
3. Smoke chicken for 3 hours at 275 with wood of choice.
Serving suggestion: Pair with braised cabbage.
