Smoked Chicken Thighs

Ingredients

    7 lbs bone in, skin on chicken quarters
  • 2
    1 C. apple cider vinegar
  • 3
    1/2 C. extra virgin olive oil
  • 4
    1/2 C. extra virgin olive oil
  • 5
    1/2 C. minced onion
  • 6
    1 1/2 Tsp. kosher salt
  • 7
    4 minced garlic cloves

Instructions

1. Mix apple cider vinegar, extra virgin olive oil, minced onion, kosher salt, and garlic cloves in a bowl
2. Pour mixture over chicken.
3. Set in fridge for at least an hour
4. Heat grill to 250˚F
5. Add Smokin' Stone
6. Place chicken on grill
7. To crisp up the skin, take temp up to 350˚-400˚F when chicken has internal temp of 140˚F for about 15 minuets
8. Remove chicken when internal temp reaches 165˚-185˚F
9. Let cool for 10 minutes, then serve.
